We love a hearty warm salad that is not just tasty but filling too – here’s one of Rich’s creations with a base of baby leaf spinach. Tossed in a pan were cubes of lardons in softened red onions. Meanwhile we boiled broad beans until cooked and then peeled them. Yes this takes a while but is worth it and gives the bean a much sweeter taste. After adding to the salad tossed threesome shredded apple slice cucumber and roughly chopped mint. Season before scooping out half an avocado and garnishing with spring onions and soft boiled eggs. Et voila! A moreish tasty salad dish. Enjoy!
